PhilSpice Sauteed Shrimp

1/2 large red bell pepper, diced

1/2 large sweet onion, diced

sliced mushrooms (optional)

2 cloves garlic, diced

1 tablespoon olive oil

1 1/2 lbs raw shrimp, peeled and deveined

Phil Spice

2 tablespoons butter

shaved Parmesan Cheese

angel hair pasta

Heat olive oil in large frying pan; add pepper, onion and garlic and sautee until tender. Add shrimp and sprinkle liberally with Phil Spice. Cook until shrimp are done then add butter and stir until butter is well-blended. Serve over angel hair past with shaved Parmesan.


Beer Roasted Chicken

Whole chicken – 3-4 lbs

Garlic oil

Beer in a can

Beer can rack

Pre-heat oven to 350. Pour half the can of beer into a separate container and set aside for personal consumption. Place remaining half can of beer in beer rack in a roasting pan.

Coat chicken with oil (preferably garlic oil for more flavor) then coat liberally with PhilSpice. Set chicken onto beer rack and plug neck hole with a chunk of sweet potato, potato or carrot to trap the flavor and moisture.

Add about two inches of water to pan and place on bottom rack of oven so as not to get the chicken to close to the top heat.

Insert remote meat thermometer and set for poultry. The timer will sound when the temperature reaches 175. Skin should be crispy with a beautiful brown color.

Garlic oil

Divide garlic head into separate cloves.  Remove skin and store in canola or light olive oil.  The oil will both preserve the garlic and absorb its flavor ensuring that you always have fresh, moist garlic on hand for months at the time and have garlic flavored oil to sautee with.  A healthy alternative to cooking with butter and garlic!

Remote meat thermometer

Remote digital meat thermometers have a sensor to place in the meat while the thermometer and timer sit outside the oven on the counter.  You don’t have to keep opening the oven door letting out heat or risk burning your hands to check the temperature!

Oil Sprayer

 A handy alternative to cooking sprays which have additives and damage the ozone.  Oil sprayers use a small amount of oil which, after the pump has been primed, easily coats meat and fish so PhilSpice will adhere nicely!

Beer can rack

Available at many cooking specialty and outdoor stores. The liquid inside the can steams the inside of the chicken or turkey ensuring moist and juicy meat. Colas can be substituted for beer as desired.
